Heating segment
Our heating technology is engineered for precision, control, and consistency throughout every stage of mix preparation. With optimized temperature curves and uniform heat distribution, the system ensures safe pasteurization while preserving flavour integrity and natural ingredients. Intelligent sensors maintain stable conditions, reducing variability and helping artisans achieve reliable, repeatable results with every batch.
Heating
Bain-marie heating system
The pasteurizers of the series TTi and QUICK as well as CHEFCREAM are provided with a bain-marie heating system of the latest generation that highlights all the pros of the classic bain-marie system. Uniform and controlled temperature conditions are guaranteed up to 120 °C without thermal inertia. Resistance heating devices operate individually according to the quantity of processed product.
Dry heating elements
Combined and multipurpose MULTY P and SMARTY are provided with high efficiency dry heating elements of the latest generation. Resistance heating devices operate individually according to the quantity of processed product up to max 125°C without thermal inertia.
Hot gas
MULTY HP and MULTY VP models are provided with a hot gas reverse cycle heating system.
Cooling segment
The cooling systems in our machines are designed to deliver rapid, efficient heat removal while maintaining exceptional product texture. Advanced refrigeration components and dynamic airflow ensure uniform freezing, preventing ice crystal formation and supporting smooth, creamy results. Whether you’re batch freezing, hardening, or chilling, the cooling segment provides the power and reliability needed for professional gelato production.
Cooling
A cutting edge Bain-marie heating system
It is provided in the SWEETY pasteurizers of the series TTi and QUICK and CHEFCREAM. Uniform and controlled temperature conditions are guaranteed without thermal inertia thanks to the innovative ice-prevention system for storage or cooling of min quantities processed.
Big size
BIG SIZE series is one of Valmar peculiarities that make this brand unique: big production rate batch freezers and pasteurizers that, thanks to Valmar technology and reliability, have the same quality standards of small and medium-size machines as well as a matchless loading flexibility up to 1/6 of their max production rate.
Inverter
Technological evolution has led Valmar to choose to install top quality inverters in all the machines of the TTi series thus considerably improving their performances and in particular those of the MULTY P model, which is provided with a double inverter. While the former operates the stirrer of the upper heating tank the latter governs the stirrer in the batch freezing cylinder and/or cooling cylinder.
Touch & Type
Another technological peculiarity of Valmar is the choice to provide its machines with double controls. The user can choose to operate the machine through the innovative 4.3” LCD touchscreen, with its clear and intuitive icons, or through the more traditional Type mode.
Lid
Valmar’s machines are equipped with a high-tech material double lid of the latest generation, totally atoxic, free from BPA bisphenol. The lid is provided with opening system actuated by servo-assisted hydraulic pistons for easy ingredient introduction even in case of product in progress. The machine has not to be stopped to lift the first lid in full compliance with certified EC safety regulations.
Automatic washing system
A new automatic washing system is installed as an option in the SWEETY pasteurizers of the TTi series. Thanks to the special stirrer and to a dedicated washing programme the machine performs the washing cycle completely autonomously.
